Distillerie Poli: Crafting Grappas with Love and Tradition

Founded in 1898 by GioBatta Poli, Distillerie Poli is an artisan distillery located in Schiavon, near Bassano del Grappa, in the heart of Veneto, Italy. This region is renowned for its production of Grappa, and the Poli family has been dedicated to this craft for over a century.

A Family Tradition:

The history of the Poli family is closely connected with the history of the Veneto region. Over the centuries, the family has worked as shepherds, inn-keepers, and finally, distillers. Despite changes in the goods they produced, their core values of duty, social responsibility, respect for the customer, and family honor have remained constant.

For four generations, the Poli family has been committed to producing high-quality Grappa. Their dedication is driven by a deep love for their art and a desire to share this passion with the world. The distillery uses an ancient copper alembic, one of the few still in existence, to create Grappa and other distillates that balance personality and elegance.

Cultural Significance:

The Poli Distillery is not just a place of production; it is a site of historical and environmental interest. The facility's porch structure is typical of ancient Venetian rural houses. The distillery is also home to the Poli Grappa Museum, which attracts over 150,000 visitors annually, making it one of the most popular corporate museums in Italy.

Grappa Production:

Copper Alembic Stills: Poli Distillerie uses ancient copper alembic stills, which are among the oldest in use today. These stills consist of cauldrons made entirely of copper, a material known for its excellent heat conductivity and ability to enhance the flavors of the distillate.

Discontinuous Distillation Process: The distillation process at Poli is discontinuous, meaning that the grape pomace is distilled in batches. The pomace is placed in the copper cauldrons and distilled using steam. After about three hours, the cauldrons are unloaded, and the cycle starts again.

Oak Barrels: For aging their Grappa and wine brandies, Poli uses around 4,000 oak barrels stored in their Heroesโ€™ Cellar. The oak barrels contribute to the development of complex flavors and aromas during the aging process.
