Chateau de Chamirey Mercurey 1er Cru "Les Cinq" 2016, 750ml
After the exceptional 2010 vintage, the family introduced 'Les Cinq,' a prestigious cuvée that blends the best barrels from five Premier Crus of the Château: Les Ruelles (monopole), En Sazenay, Clos du Roi, Clos l'Évêque, and Champs-Martin.
The winemaking process starts with a 4 to 6-day cold pre-fermentation maceration to enhance phenolic extraction. The grapes are partially destemmed and undergo a 15-day maceration with punch-downs and pump-overs, using natural yeasts for fermentation.
The wine ages 100% in traditional 228-liter Burgundian barrels for 15 months, with about 80% new barrels. It then spends three months in stainless steel tanks before bottling. Only French oak from Allier and Vosges forests is used.
Tasting Note:
Aromas of red and black cherries, rich soil, espresso roast, and game bird. On the palate, it is medium to full-bodied, ample, and layered, with juicy acidity and a fine-grained yet firm tannic structure.
