Chateau de Chamirey Mercurey Rouge 2019, 750ml
The Mercurey Rouge is produced from 10 small plots, including three Premier Cru sites: En Sazenay, Champs-Martin, and Clos L'Évêque, with soils predominantly of clay and limestone.
The winemaking process begins with a 4 to 6-day cold pre-fermentation maceration to enhance phenolic extraction. The grapes are partially destemmed, then undergo a 15-day maceration period involving punch-downs and pump-overs. Natural yeasts are used for fermentation.
After maceration, the free-run and press wines are separated for aging. The wine matures 65% in traditional 228-liter Burgundian barrels (10% new) for 7 months, followed by 2 months in stainless steel vats.
Tasting Note:
After aeration, the nose develops aromas of fresh red fruits complemented by floral notes of violet. On the palate, the attack is direct and well-defined. There is a pleasing balance between acidity and roundness, with fresh tannins contributing to an elegant and refreshing finish.
