This Chardonnay with 20-year-old vines, undergoes whole-cluster pressing with a pneumatic press. The juice settles for 24 hours before racking and vatting. Indigenous yeasts are used, and fermentation temperatures are controlled. The wine undergoes 100% malolactic fermentation and is aged for 12 months on lees in oak barrels (30% new). It spends an additional month in tanks before bottling.
Tasting Note:
Pale gold with a tight, flinty nose with lovely grilled notes, creamed lemons, white flowers, leading to a linear palate of citrus and white pear, mineral and fresh, really nicely done with a long, ripe finish.
