Akayane 500 Series Ume Plum, 500ml
Akayane Distillery is an independently owned and operated distillery located in Ei, Kagoshima Prefecture, Japan.
Established in 2006, it produces artisanal spirits using locally grown Satsuma imo sweet potatoes and crystal-clear, mineral-rich groundwater from Mount Kaimondake.
The distillery utilizes both European direct-heating and Japanese indirect-heating stills for distillation, and experiments with diverse cask types for maturation, including ex-bourbon, ex-sherry, and Japanese Mizunara oak.
A clear spirit made from the combination of Shochu (distilled from sweet potato) and plum Oshukubai (Plum wine) grown in Japan without any pesticides.
The distillery has a history of producing umeshu, a type of plum liqueur. A unique method is used to crush the plums from the umeshu, ferment them with wine yeast, and age the resulting spirit in cognac barrels. The final product has a subtle plum aroma, making it an excellent choice for a post-meal digestif.
