Yoshi No Gawa Daiginjo 50 PAIR, 720ml
“PAIR” is a proprietary name chosen for branding, suggesting harmony and balance, while 50 is related to 50% polishing ratio.
Brewed by Yoshinogawa in Niigata Prefecture, this Daiginjo includes a small amount of brewer’s alcohol to enhance aroma and create a lighter texture. It uses Niigata-grown Gohyakumangoku rice polished to 50%, fermented in stainless steel tanks, and aged at sub-zero temperatures for several months to refine its character. It has 14% alcohol, an SMV of +2 (slightly dry), and is crafted under the supervision of the Echigo Toji guild. Recommended serving temperature is chilled, around 10°C.
Tasting Note:
Aromas are delicate and ginjo-driven, with hints of melon, pear, and subtle floral tones. The palate is clean and crisp, showing light fruit sweetness balanced by a dry, refreshing finish. Overall, it is elegant, smooth, and understated, with a refined sense of balance.
