Yoshi No Gawa Junmai Daiginjo Hizoushu, 720ml
“Hizoushu” means “aged sake,” and has undergone extended maturation to develop depth and complexity.
Brewed by Yoshinogawa in Niigata Prefecture, this Junmai Daiginjo uses Gohyakumangoku rice polished to 40%, fermented in stainless steel tanks, and aged for an extended period before release. It has 17% alcohol, an SMV of +5 (dry), and is crafted under the Echigo Toji tradition. Recommended serving temperature is slightly chilled to highlight its mature character.
Tasting Note:
The nose is rich and layered, with notes of caramel, toasted bread, and subtle dried fruit. On the palate, it is full-bodied and smooth, showing mature umami, gentle sweetness, and a dry finish with lingering complexity. Overall, it is elegant, robust, and deeply expressive, reflecting the character of aged sake.
