Ca' del Baio "Asili" Barbaresco 2019, 750ml
The Ca' del Baio story began on the Asili cru, one of the most renowned in the Langhe. This Barbaresco DOCG wine, made from 100% Nebbiolo, captures the essence of the estate’s oldest vines, planted between 1957 and 1999. The vineyard benefits from bluish clayey-limestone marl soils and a southwest-facing position, contributing to the wine's elegant character.
The grapes are destemmed and pressed, then undergo fermentation on the skins in temperature-controlled steel tanks for 5 to 30 days. Following fermentation, the wine matures in wood for 24 months, partly in oak casks and partly in small French barrels, before undergoing an additional 6 months of bottle aging
Tasting Notes:
Bright garnet red, with slight orange tinges; nose intense, with fruity aromas of marasca cherries and hints of violets. Spicy notes of black pepper, liquorice and goudron; taste dry, warm and soft, showing a long, rich, smooth flavour.
