Sourced from sustainably farmed, 40-year-old Sauvignon Blanc vines in "Le Chêne Marchand," one of Sancerre's most renowned single vineyards in the village of Bué. Planted on steep, south-facing slopes composed of shallow, highly calcareous caillottes (stony Oxfordian limestone) soils. The grapes are gently pressed using pneumatic presses and settled cold for 24 hours. Fermented with indigenous yeasts in temperature-controlled stainless steel vats and neutral oak vats. The wine ages on fine lees in stainless steel tanks (80%) and neutral French oak casks (20%) for 18 to 24 months prior to light bentonite fining and bottling.
Tasting Note:
Aromas of fresh Meyer lemon, white peach, green apple, white blossoms, lemon verbena, crushed chalk, and wet flint. The palate is dry, medium-bodied, delivering a concentrated core of citrus and orchard fruit balanced by vibrant acidity and a texturally rich mid-palate. The finish is long, chiseled, and intensely mineral-driven.
