Domaine des Perdrix Nuits St Georges 1er Cru Aux Perdrix "Les 8 Ouvrees" 2020, 750ml

This cuvée comes from the oldest vines of the domaine, planted in 1922 on the famous 1er Cru ‘Aux Perdrix’ and covers a size of 8 ouvrées. The word ‘ouvrées’ used to represent the surface that a winegrower could plough in 1 day and corresponds to 0.042 hectares.
The total parcel is 0.34ha located in the north side of the climat facing east sitting on a clayey soil.

The grapes are harvested and 100% of the whole clusters are kept, following a cold soaked during 4 to 6 days to extract color and the more delicate flavors. Then full maceration lasts for 15 days with punch downs. The must in then fermented with indigenous yeast.

The wine is aged for 18 months with in 60% new barrels from Allier and Vosges forests. The wine spends 2 months in stainless steel tanks before bottling.

Tasting Note:

Deep red color with velvety aspect. Expressive nose of matured red fruits: black cherries, cassis, remaining on the finesse and the freshness brought by spicy and peppery notes, almost mentholated. In the mouth, tanins are silky, giving an harmonious sensation.
