100% Pinot Noir from the Clos Saint-Pierre vineyard, a high-elevation monopole with eastern exposure and iron-rich red soils. The 50-year-old vines are farmed traditionally using seasonal plowing and natural cover crop. The fruit is fully destemmed and ferments spontaneously with native yeasts in century-old, open-top wooden vats. Maceration lasts two weeks with twice-daily foot-treading. The wine ages for 12 to 18 months in used French oak barrels with 5% new oak, resting undisturbed on its fine lees without systematic racking.
Tasting Note:
Aromas of ripe cherry, red fruit, earth and spice on the nose. Round attack. Balanced fruit on the mid-palate with supple tannins and fresh acidity. The finish shows good length and 8-12 years of ageing potential.
