Domaine de la Garreliere Cinabre 2017, 750ml
CINABRE is a Touraine AOC made from a single plot of Cabernet Franc planted in 1978 in a south facing slope. The soils is flint clay over limestone with an iron vein.
The wine undergoes natural fermentation in concrete tanks, with maceration lasting 2-3 weeks and gentle extraction. Press and free-run juices are combined, followed by malolactic fermentation in barrels. The wine is aged in 500-liter barrels for over 12 months, blended for at least 2 months before bottling, with SO2 adjusted at bottling.
Tasting Note:
Aromas with dried violet petals with lots of ripe and jammy berries such as raspberries, currants and blueberries, then smoky and herbaceous notes follow, especially of laurel with hints of minerals and dark spices. Chocolate and liquorice on the finish. The tannin is noble and the finish is long.
