Sourced from organically and sustainably farmed indigenous vineyards located in the Anoia and Foix river basins within the Penedès region (D.O. Cava). A traditional blend of Xarel·lo (40%), Macabeo (30%), and Parellada (30%), the grapes are hand-harvested early in the morning to preserve natural acidity and fresh fruit aromatics. The varieties are vinified separately, undergo low-temperature fermentation, and are bottled for secondary fermentation using the traditional method. The wine ages on fine lees for 18 months in century-old underground cellars situated 30 meters below ground at a constant 14°C before disgorgement. Dosage 8g/l
Tasting Note:
Aromas of fresh green apple, ripe pear, and citrus zest pair with subtle notes of tropical pineapple, yeast, and freshly baked bread. The palate is dry, crisp, and well-balanced, featuring a fine, creamy mousse and a lively core of white fruit and citrus framed by energetic acidity. The finish is clean, long, and lightly toasted with a refreshing mineral lift.
