Domaine Jean-Marc Bouley Volnay "Clos de la Cave" 2019, 750ml
100% Pinot Noir grown on a 0.68-hectare parcel located on a steep, southeast-facing slope behind the domaine in Volnay. The vineyard features deep white marl and sandy soils and is farmed sustainably without herbicides or chemical fertilizers. Vines were planted in 1961, 1975, and 1998. Grapes were manually harvested and fermented with 0–50% whole clusters in concrete or stainless steel tanks using ambient yeast, after cooling to 14°C. Fermentation lasted 2–3 weeks with gentle punch-downs and pump-overs. The wine was aged for 18 months on lees in French oak barrels, 5–15% of which were new.
Tasting Note:
Aromas of rose petal, Morello cherry, wild strawberry, and crushed stone. The palate is medium-bodied, taut, and fresh, with integrated tannins, subtle tertiary notes, and a saline finish. Overall, the wine is elegant and structured, with excellent delineation and ageing potential.
