Domaine Chevillon Chezeaux Nuits St Georges "Aux Saints Juliens" 2022, 750ml

100% Pinot Noir from 0.30 ha from a single parcel in Aux Saint Juliens at 230 to 250m of altitude. A very complex soil mixing marl from Oligocene period and clayey loam. Age of the vines: 60 years old.

The grapes are 100% destemmed and lightly crushed, followed by a pre-fermentation, cold maceration of 7 days,and fermentation with punch downs and pump overs. The wine is pressed and transferred to barrels by gravity, ages 16months in 10% new oak barrels.

Tasting Note:

In their youth, they express themselves with sobriety and austerity. The vegetal nuances with wild fruitiness such as sloe mingle with strawberry and a few floral notes. They become more refined over the years, evolving towards animal and creosote odours combined with candied strawberry and blond tobacco.
