Castellari Bergaglio "Fornaci" Gavi di Tassarolo 2025, 750ml

This 100% Cortese is sourced from hillside estate vineyards in Tassarolo planted on clay soils. The fruit was hand-harvested and gently pressed before fermentation began in temperature-controlled stainless steel tanks using selected yeasts. The wine aged for 5-6 months in stainless steel tanks prior to bottling, with no oak used during maturation.

Tasting Note:

Aromas of pear, crisp green apple, hawthorn, and citrus peel open on the nose, accompanied by subtle notes of hay and mint. The palate is light-to-medium-bodied and balanced, showing a smooth texture and bright acidity. The finish is clean, dry, and persistent, with notes of fresh fruit and wet stone minerality.
