This blend of 70% Grenache, 20% Mourvèdre, and 10% Syrah is sourced from several distinct plots, including "Le Bois de la Ville" and "Les Serres" (gravelly soil for drainage and concentration), "Farguerol" and "Cansaud" (red and blue clays for aromatic richness), and "Cabrières" and "Revès" (limestone for structure). The grapes were fully de-stemmed before fermentation began in concrete tanks. The Mourvèdre and Grenache were co-fermented and aged for 18 months in concrete vats to preserve the purity of the fruit. The Syrah was aged separately for 12 to 18 months in 1- and 2-year-old Burgundian oak barrels. The final blend was made once the Syrah finished its wood ageing, and the wine stayed in the bottle for 3 months of stabilization before release.
Tasting Note:
The nose reveals generous aromas of ripe, jammy red fruits, blackcurrant, and dried herbs with hints of orange peel. The palate is ample and silky with supple, nuanced tannins and flavors of red cherry, licorice, and white pepper. The finish is long and lingering with refined spicy notes.
