Domaine Jean-Marc Boillot Volnay 1er Cru "Pitures" 2017, 750ml

100% Pinot Noir from old vines (planted around 1949-1958, approaching 60-70 years at the time) in the Volnay Premier Cru Les Pitures lieu-dit (around 0.5ha) near the village on clay-limestone soils with south-east exposure bordering Pommard. The grapes are hand-harvested with strict sorting, fully destemmed, given a cold pre-fermentation maceration (6-8 days), and undergo alcoholic fermentation with selected yeasts in stainless steel tanks with 18-21 days total cuvaison including high-temperature fermentation and gentle remontages (pump-overs) with little or no pigeage. Malolactic completed. Aged 13-16 months in oak barrels using 25-30% new wood (no racking).

Tasting Note:

Aromas show red cherry and raspberry along with floral and light earth notes. The palate delivers medium body and finesse with refined tannic structure and bright acidity. Overall impression is one of elegant concentration and persistent clarity reflecting the cooler 2017 vintage character in Côte de Beaune Pinot Noir.
