Domaine Perrot Minot Gevrey Chambertin "Justice des Seuvrees" 2018, 750ml
Gevrey-Chambertin “Justice des Seuvrées” 2018 is a village cuvée composed of two parcels: La Justice, located at the northern edge of Gevrey-Chambertin, and Les Seuvrées, situated at the southern limit near Morey-Saint-Denis. The soils are clay-limestone with good drainage and contrasting exposures, combining aromatic power from La Justice with finesse from Les Seuvrées. Vines are approximately 40 years old. Grapes were fully destemmed and underwent a cold maceration in stainless steel tanks for 5–7 days at 14°C. Fermentation was carried out with indigenous yeasts, using daily punch-downs and pump-overs for around ten days. The wine was aged for 16–18 months in 20–30% new French oak barrels, without racking, fining, or filtration, and bottled by gravity.
Tasting Note:
Once again there is enough reduction to mask the nuances of the underlying fruit. Otherwise there is very good freshness and verve to the equally racy and intense flavors that possess a lovely tension that carries over to the linear, refined and chiseled finish that is shaped by relatively fine-grained tannins. This is a very fine Gevrey villages that should also be approachable young.
