Côte de Nuits-Villages “Aux Boulardes” 2021 is made from 100% destemmed Pinot Noir grown on 1.39 hectares of silt-rich Comblanchien limestone in the village of Comblanchien, located between Nuits-Saint-Georges and Premeaux-Prissey. Vines were planted between 1966 and 1989. Fermentation begins with a one-week cold maceration in thermo-regulated stainless steel tanks, followed by a three-week indigenous yeast fermentation with minimal punch-downs and pump-overs. The wine is aged for 16 months in oak barrels, 25% of which are new.
Tasting Note:
Aromas of red cherry, dark fruit, earth and spice on the nose. Firm attack. Concentrated fruit on the mid-palate with structured tannins and fresh acidity. The finish shows good length and 8-12 years of ageing potential.
