100% Pinot Noir from the oldest vines (average 50–65 years old) in the domaine, selected from two terroirs in Bué: Oxfordian limestone (caillottes) and Kimmeridgian marls with east and southeast exposure. The domaine hand-harvests the grapes with manual sorting, followed by full destemming and a period of cold maceration. Fermentation lasts about three weeks with daily pump-overs and punch-downs. The wine is aged for 20 months in French oak barrels (approximately 40% new, 40% one-year-old, 20% two-year-old).
Tasting Note:
The 2016 opens with aromas of red cherry, raspberry, black plum, damp earth, and subtle spice with hints of leather and undergrowth. The palate is medium to full-bodied with concentrated red and dark fruit, supple yet structured tannins, vibrant acidity, good depth, and a long, elegant, mineral-tinged finish. Powerful, harmonious, and beautifully mature.
