Domaine des Perdrix Nuits Saint Georges 1er Cru "Aux Perdrix" 2020, 750ml
This 3.45 hectares plot is almost a monopole, with only Domaine de Perdrix producing wines from this famous terroir. The vines were planted between 1922 and 1955 in a clay-limestone parcel facing south east.
The grapes are destemmed and cold soaked during 4 to 6 days to extract color and the more delicate flavors. Then full maceration
lasts for 15 days with punch downs. The must in then fermented with indigenous yeast.
The wine is aged for 18 months with in 50% new barrels from Allier and Vosges forests. The wine spends 2 months in stainless steel tanks before bottling.
Tasting Notes:
The wine presents a nose of matured red fruits like black cherries and cassis, subtly enhanced by oak aging and a touch of spices and pepper. On the palate, it is generous and serious, with a long finish that carries fruity and salty notes.
