Domaine Chevillon Chezeaux Nuits St Georges "Aux Saints Juliens" 2021, 750ml

100% Pinot Noir from 0.30 ha from a single parcel in Aux Saint Juliens at 230 to 250m of altitude. A very complex soil mixing marl from Oligocene period and clayey loam. Age of the vines: 60 years old.

The grapes are 100% destemmed and lightly crushed, followed by a pre-fermentation, cold maceration of 7 days,and fermentation with punch downs and pump overs. The wine is pressed and transferred to barrels by gravity, ages 16months in 10% new oak barrels.

Tasting Note:

Right ruby red colour. Bouquet Rich and delicate, with subtle nuances of cherry and sweet spices. Flavour Energetic, fresh and taut, with saline notes in the opening, elegant and persistent.
