Domaine Chevillon Chezeaux Bourgogne Hautes Cotes de Nuits Rouge 2021, 750ml
100% Pinot Noir from 0.63ha divided in 2 parcels in Les Toppes and La Croix de Beaune, at 280 to 300m of altitude. Planted in chalk soils from the Jurassic period. Age of the vines: 30 years old.
The grapes are 100% destemmed and lightly crushed, followed by a pre-fermentation, cold maceration of 7 days, and fermentation with punch downs and pump overs. The wine is pressed and transferred to barrels by gravity, and ages for 12 months in neutral oak barrels.
Tasting Note:
A deeper ruby colour. On the nose, the bouquet opens with a basket of red and black berries (strawberries, cherries, blackcurrants, blueberries), evolving into cooked prunes, peppery, animal and undergrowth nuances, moss and mushrooms. This Burgundy is very lively on the palate, structured, with a supple and round body.
