Domaine de la Garreliere "Cendrillon" Blanc 2019, 750ml

This Sauvignon Blanc comes from a 2.5-hectare plot planted in 1979. The vineyard faces south-southeast and sits on sandy soil with flint clay underneath.

The wine undergoes gentle pneumatic pressing for 3 hours, followed by a 12-hour settling period. Alcoholic fermentation with native yeasts lasts 3-4 weeks, with 1/3 of the wine aged in 500-liter barrels and the rest in tanks for 8 months. It is bottled before summer.

Tasting Note:

Aromas of wild flowers and freshly mown grass, then damp straw and vegetal notes of peppers and asparagus, then pear and lime, sweet spices and mineral returns. On the palate, fresh and mineral, with great elegance and persistence.
