Domaine de Belliviere Coteaux du Loir "V.V. Eparses" Blanc 2020, 750ml
"Eparses" is a 100% Chenin Blanc made from Bellivière's oldest Coteaux du Loir vines, spread across five small parcels. These gobelet-pruned, 80-100-year-old beauties are planted on flinty, sandy clay soils over tuffeau (soft limestone), are certified-biodynamic and harvested by hand.
The bunches are direct-pressed in tank, where the juice settles overnight; it is then moved by gravity into barrels, where it ferments with native yeasts and minimal sulfur. The wine is aged in these 1-3-year-old, 550-liter barrels, with a small proportion of new ones in any given year, for 12 months.
The 2020 finished at a sec level of sweetness with just 3.9 g/l of residual sugar. "Eparses" means "old scattered vines" and is usually the driest, most structured of the Bellivière Chenins.
