The vines, planted in the early 2000s, are on steep, south-west facing parcels. The soil is white, marly, and fairly light, with short rows and ditches to limit erosion.
The name "Combottes" is derived from "combe," referring to the valley-like character of the parcel.
The grapes are pressed using a pneumatic press for two hours. After settling at low temperatures for 24 hours, the juice is moved to barrels, with 30% being new, for fermentation. The wine ages on lees with stirring and is bottled after 12 months.
Tasting Note
This is a delightful expression of the region's terroir, showcasing ripe green fruit and warm stone aromas, framed by a subtle touch of pain grillé. The middle weight flavors are accessible and forward, with a punchy finish that is both satisfying and unpretentious.
