Domaine Jean-Marc Boillot Volnay 1er Cru "Carelle sous la Chapelle" 2021, 750ml

100% Pinot Noir grown in a 0.28-hectare mid-slope parcel with east/southeast exposure and clay-limestone soils, planted in 1958. The grapes were fully destemmed and underwent a cold soak for 6 to 8 days in closed stainless steel tanks, followed by alcoholic fermentation with selected yeasts over 18 to 21 days, using minimal punch-downs and gentle pump overs. Malolactic fermentation was completed in barrel, and the wine was aged for 13 months in 228L, 350L, and 390L French oak barrels, 30% of which were new, without racking.

Tasting Note:

On the nose, it offers red cherry, rose petal, and subtle spice. The palate is supple and balanced, with fine tannins and a mineral finish. Overall, it’s a refined and scented Volnay that combines elegance with quiet depth.
