Christian Drouin Calvados Pays d'Auge Millesime 1961, 700ml
Distilled in 1961 at the Coeur de Lion estate using double distillation in a traditional 2,500-liter copper pot still. The cider was produced from a blend of 35 organic apple varieties, grouped into sweet, bittersweet, bitter, and acidic types. Apples were harvested only at full ripeness, then washed, sorted, and pressed. Fermentation took place in vats over a period ranging from five weeks to one year. The resulting cider was distilled and the new spirit matured for several decades in a mix of seasoned casks that previously held Sherry, Port, Cognac, and Bordeaux wines. Final ageing occurred in 15 to 25 hectoliter vats.
Bottled at 40 percent ABV, this expression is part of Christian Drouin’s millésime collection, a series of single-vintage releases presented in wooden cases.
Tasting Note:
The nose opens with aromas of gingerbread, baked apple, and aged wood. The palate is silky and delicate, with notes of stewed pear, cinnamon, and nutmeg. The finish is long and balanced, with soft tannins and lingering fruit.
