Domaine Rossignol Trapet Gevrey Chambertin V.V. 2021, 750ml

100% Pinot Noir, sourced from biodynamically farmed parcels across Gevrey-Chambertin, including En Combe, Clos de Combe, Les Crais, Justice, and Clos de l’Arche, with soils ranging from deep clay to gravel and limestone. Vines average 50 years of age. Fermentation is carried out with native yeasts in open wooden vats, using a mix of destemmed and whole clusters depending on vintage conditions. Ageing takes place in French oak barrels, around 20% new, for approximately 12 months before bottling.

Tasting Note:

The nose opens with ripe cherry, blackcurrant, and subtle earthy tones, layered with hints of violet and crushed stone. On the palate, the wine is firm and focused, showing dark fruit, fine-grained tannins, and a mineral edge, with balanced acidity and a persistent finish.
