Chateau de Chamirey Mercurey 1er Cru "Les Cinq" 2011, 750ml
After the exceptional 2010 vintage, the family introduced 'Les Cinq,' a prestigious cuvée that blends the best barrels from five Premier Crus of the Château: Les Ruelles (monopole), En Sazenay, Clos du Roi, Clos l'Évêque, and Champs-Martin.
The winemaking process starts with a 4 to 6-day cold pre-fermentation maceration to enhance phenolic extraction. The grapes are partially destemmed and undergo a 15-day maceration with punch-downs and pump-overs, using natural yeasts for fermentation.
The wine ages 100% in traditional 228-liter Burgundian barrels for 15 months, with about 100% new barrels. It then spends three months in stainless steel tanks before bottling. Only French oak from Allier and Vosges forests is used.
Tasting Note:
Beautiful dark ruby colour. The nose is powerful with alcoholic fruits perfumes, light spicy notes and oaky. On the palate, find the oaky and fruity aromas. Tannins are present and firm but riped. Very long aftertaste.
