Domaine Louis Michel Chablis 1er Cru "Vaillons" 2020, 750ml
These small climates in the Valvan Valley: Vaillons, Roncières, Mélinots are blended during the vinification process, to create 1er Cru Vaillons. Located in the left bank planted in Kimmeridgian soil with hard limestone in and high clay content. Moderately deep with a reddish brown appearance. The climate in the valley acts as a heat trap, which gives this wine warm and spicy notes; or even roasted notes.
Long fermentation using indigenous yeasts, in temperature-controlled stainless steel tanks. Malolactic completed. Matured for 12-16 months in stainless steel tanks, with the least possible handling. Long cold stabilization.
Tasting Note:
The most mineral nose so far, with straw, wet stones and pine tree aromas. On the palate, a combination of rum butter and lemon, more stony, minerals and earthy with a bit of stone-ground wheat on the finish.
