Eugenio Collavini Chardonnay "dei Sassi Cavi" Collio Goriziano 2025, 750ml

Named "dei Sassi Cavi" ("of the hollow stones") after the stony quarries and mineral-rich ponca soils (marl and sandstone) of the region, this single-varietal Chardonnay comes from selected hillside vineyards in the prestigious Collio Goriziano DOC in Friuli. The grapes were macerated for 12–16 hours at 12°C to extract delicate varietal aromatics. Fermented and aged on its lees in temperature-controlled stainless steel vats to preserve vibrant acidity, pure fruit purity, and territorial mineral precision.

Tasting Note:

The wine opens with perfumed aromas of white peach, green apple, and citrus peel, accompanied by notes of white flowers and subtle yeast. The palate is crisp, balanced, and medium-bodied, offering a harmonious blend of orchard fruit and vibrant, fresh acidity. The finish is long, clean, and slightly saline.
