Octave系列威士忌的最後熟成工序是在重新改造的雪莉酒桶中進行的。這些較小的酒桶能增加酒液與木材的接觸，使酒液更加鮮活，最終釀造出令人驚豔的佳釀。

Palate: Thick, full, and mouth-coating. Not overly sweet, but not bitter either. Meaty with some spice, peppery pencil shavings, and darker fruits like figs and prunes. The chocolate notes transition to milky coffee, all very elegant and refined.

餘韻：悠長，帶有揮之不去的泥土氣息，一絲青草煙燻和煤灰的味道。入口最初的辛辣感逐漸被溫暖的蜂蜜味所取代。口感乾淨平衡，是一款非常值得品嚐的威士忌。
