Domaine Louis Michel Chablis 1er Cru "Vaillons" 2023, 750ml

100% Chardonnay from the Vaillons Premier Cru, situated on the left bank of the Serein River. The vineyard’s classic Kimmeridgian limestone soils, rich in fossilized shells, impart minerality and tension. Louis Michel & Fils is known for its unoaked style, fermenting and aging entirely in stainless steel to preserve purity and terroir transparency. Grapes were hand-harvested, gently pressed, and fermented with native yeasts, then aged on fine lees in stainless steel for about 12 months before bottling the following summer.
Tasting Note:
The 2023 “Vaillons” is vibrant and expressive, with aromas of citrus zest, green apple, and white flowers, layered with flinty minerality. On the palate, it is precise and energetic, showing crystalline fruit, lively acidity, and a saline backbone. The finish is long and refreshing, combining clarity with depth, and highlighting the terroir’s finesse.
