Domaine Francois Carillon Saint Aubin 1er Cru "Les Murgers des Dents de Chien" 2023, 750ml

This 100% Chardonnay is sourced from a 0.75-hectare parcel in the 1er Cru vineyard of Les Murgers des Dents de Chien, situated on steep, stony slopes with white limestone-rich soils. The grapes were gently pressed and fermented with native yeasts in French oak barrels (20% new oak). The wine aged on its fine lees in barrels for 12 months before resting in stainless steel tanks prior to bottling.

Tasting Note:

The wine opens with aromas of citrus blossom, white peach, lemon oil, and fine chalky minerality, complemented by subtle toasted notes. The palate is crisp, focused, and vibrant, offering rich orchard fruit and lemon flavours balanced by taut acidity, saline tension, and a silky texture. The finish is long, dry, and structured, ending on a crisp stony mineral note.
