Roger Goulart Cava Rose Brut 2023, 750ml

Sourced from sustainably farmed vineyards in the Anoia and Foix river basins within the Penedès region (D.O. Cava). A blend of Garnacha (90%), Monastrell (5%), and Pinot Noir (5%), the grapes are hand-harvested in the cool early hours of the morning to preserve fresh fruit character and high natural acidity. The varieties undergo brief low-temperature cold maceration (~8 hours) to extract color and primary aromatics prior to gentle pneumatic pressing. Following initial fermentation, the base wine undergoes secondary fermentation in the bottle using the traditional method. The wine ages on fine lees for 14 to 18 months in historic underground cellars situated 30 meters below ground before disgorgement. Dosage 8g/l

Tasting Note:

Aromas of fresh wild strawberry, red cherry, raspberry, red licorice, and a touch of creamy yeast. The palate is dry, vibrant with a fine perlage and a silky core of ripe red fruit, fresh acidity and a supple, creamy texture. The finish is clean, persistent, and delicately fruity.
