The grapes were hand-picked and whole-cluster pressed before fermentation began using 100% native yeasts. The wine underwent 100% malolactic fermentation while being stirred on its lees (bâtonnage) twice a month to build texture. The wine aged for 10 months in French oak barrels, consisting of 31% new oak and 69% used oak barrels.
