The grapes are hand-harvested, fully destemmed, given a cold pre-fermentation maceration, and undergo alcoholic fermentation with indigenous yeasts followed by 18-20 days total cuvaison. Aged 18 months in oak barrels using 25-30% new wood.\u003c\/p\u003e\n\n\u003cp\u003eTasting Note:\u003cbr\u003e\nAromas of black cherry, dark fruit, licorice and spice on the nose. Firm attack. Concentrated fruit on the mid-palate with structured tannins and fresh acidity.
