The soil is a rare mix of limestone scree for drainage and deep rooting, combined with clay-limestone that contributes to structure and freshness. Grapes were fully destemmed and fermented with indigenous yeasts in stainless steel tanks, following a cold maceration. The wine was aged for 16–18 months in 20–30% new French oak barrels, without racking, fining, or filtration, and bottled by gravity.\u003c\/p\u003e\n\n\u003cp\u003eTasting Note:\u003cbr\u003e\nAromas of dark cherry, blackberry, licorice and spice on the nose. Firm attack. Intense concentration on the mid-palate with structured tannins and fresh acidity.
